a modified donna hay recipe from way back, my standard i-want-cake-i-want-it-now thinggo. i like this one because most cake recipes seem far more complicated than they should be, and this one can't get simpler.
cream 250g softened unsalted butter with 2/3c to 1 c. sugar until fluffy, beat in three eggs one at a time. add some lemon zest or vanilla, fold in 2 cups of dessicated coconut, 1 cup of self-raising flour, 1/3 c. of sour cream. spoon into prepared pan, bake at 315ºf, for 45 minutes or until toothpick inserted in center comes out clean. pour a generous amount of coconut or mint flavoured syrup (i use torani brand for italian sodas) over the cake while it is still warm.
