ice candy
one of the things i usually bring back from the philippines is a small packet of narrow plastic bags used for making ice candy. i am more of a popsicle than ice cream person, and whenever i have a little juice or some overripe fruit, i like to have the bags on hand so i chop or purée the fruit, add the juice, then throw them in the freezer for a future, frosty treat.
ice candy is basically a popsicle made usually from a combination of fruit and water, and the one i recall seeing the most in the philippines is one made from sweetened young coconut water (buko juice) and shreds of the young coconut meat. however, you can make them from whatever your creativity or your pantry will allow.
from the left: sweetened red bean (anko) with crushed ripe strawberries and milk, pineapple juice with lychee fruit, traditional sicilian chocolate gelato (an alice medrich recipe--it is the most luxurious pudding pop you'll ever have), limeade with pomegranate seeds and mint, and young coconut juice with bits of coconut and lime zest.
just pour the ingredients into each bag (a funnel would be easiest, but a pitcher works fine), tie off the top, then throw into the freezer. if you have one of those heat sealing vacuum machines, you can make similarly shaped bags, or use a popsicle mold or little plastic or paper cups. the nice thing about these bags, however, is that the plastic offers a little built in protection from sticky fingers, and they can be toted around for a picnic or backyard barbecue with little fuss.

ReplyDeletebut i'll definitely be making the chocolate gelato in my icecream machine. i just made kiwi sorbet the other night -- tangy and refreshing.
my mum would make red bean and green bean soup -- sweet desserts -- all the time when we were growing up and we would make popsicles with the leftover soup in such plastic bags!!! didn't think anyone else in the world would do the same thing...you get me all nostalgic...aaawwwww
ReplyDeleteThose are beautiful! Long and skinny is prettier and so much more practical than something on a stick (where a big chunk inevitably falls to the ground).
ReplyDeleteyour post brought back memories, used to make assorted flavors of ice candy back in the Philippines when my mother still had her "sari-sari" or variety store in Marikina - we sold them fast in the hot summer months - still remember those pastel colored plastic tubes of ice candy, our buyers prefer them creamy with milk in mango, orange, pineapple, strawberry, cantaloupe & other refreshing flavors...thanks for the memories!!

hi marketman--someone should think about selling different sorts of ice candy at one of the markets some time, just to see how they'd go over. i remember that there was some ice dessert fad for awhile, why can't there be an ice candy one?
hi nic--try looking at one of the asian or indian grocery stores some time, they might be available. if you have a vacuum sealing machine, you can easily make some. you can also make super skinny ones by closing off one end of those tapioca drink straws (also available at asian supermarkets) and then just push up the ice as you go along.

ReplyDeleteThose ice candy plastic bags are so useful in the kitchen. I stocked up on it when I lived in the states. I put leftover condiments (because sometimes the ratio of calamansi and patis in that batch of sawsawan is just TOO good), pasta sauce for freezing, crayons... whatever that needs a small bag.

ReplyDeleteThis was one of my favourite treats the year I lived in the Philippines. We called it a-go-go. My fave flavours were the buko and the avocado - actually that one was my absolute favourite!! My mom brought some of the wrappers back for me, but I've been hesitant to use them (all 10+ years I've had them...) because of all that stuff about BPA...maybe someday when my kids are older, I'll get over that fear, lol.
